Victorian Sponge Cake

Its weekend again... Had a busy weekend but still I managed to squeeze some time to indulge myself in baking.
This week I baked Victorian Sponge Cake which was chosen by my mum. She said I have promised her to bake it on Mother's Day (which I think maybe I did since I passed her the book to choose a cake she likes) but I had make a Lemon Drizzle Cake instead. =P

Mum likes her cake to be cream..thus I bought the fresh cream for whipping. I even bought the strawberries for decoration. Check out the piccies.



Verdict : I wished the texture of the cake was abit more spongy & soft. Abit sweet for Mum due to the cream. Perhaps I should reduce the sugar. Dar & bro give me a 7 out of 10. Sis said not bad too.  *beam*
Dar is hoping that I would bake his favourite -  chocolate fondant this week. HAHA!

Chocolate muffins with Yoghurt

As I had a stronge urge to bake last night, I have tried the Chocolate muffins with Yoghurt. Well, supposedly chocolate chips are required for this receipe but I omitted that out. :D

Since I have only this muffin tray, I need to bake in 3 batches to make out 18 cups of muffins. Luckily the baking time was short ie 20 mins.

Verdict : I like the cocoa taste yet not too sweet. :) Of coz, my dar still prefers his fondant to these muffins. wahahaha!

chocolate fondant

Yeap.. I managed to make the chocolate fondant over the weekend. Its Dar's favourite :D I'm so glad he likes it.

Since I'm not using the 70% dark chocolate as stated in the receipe, I used my existing 58% dark chocolate & reduced the 100g of sugar to about 50g. It turned out not so sweet which I like! I managed to bake 4 cups of it. So I offered one to my neighbour. :D Feedback is not bad too. kekekeke.....
 

 

Amazed

Since I am so into baking now, I have been looking through the net to find more receipes or tips & techniques. I chanced upon some blogs which I'm totally impressed & amazed with. A few of them are working mums with children & they do really make an effort to either bake or cook or both. They even decorate so well on the dishes or cakes. OMG. I really salute to them & really inspire me to be like them :D

I wish ... I hope... I try.....

chocolate cake

Yeap, I did my 1st chocolate cake after so many attempts of baking.  Yesterday after work, once I reached home, I started to get the ingredients ready. The whole process was easy to handle. It only took me an hour plus(including preparation)  to bake the cake.

It was successful & had a very nice aroma of the chocolate while baking.

Verdict : Nice texture & moist. However abit too sweet. So I shall go easy with my sugar the next time. It stated 125g but I think I will just go for 100g.

~ noticed that the cake is quite flat? cos no raising agent was added :) ~
